Lunch Hour

Since I am not working a regular job right now, I have the ability to make my lunches at home. When I used to work, I had a bad habit of buying my lunch every day. This was expensive and overall not very healthy. I always ate more than I actually needed.

I still go out for lunch a few days a week, but I have definitely increased my at home lunches. My go to meals are deli turkey,a piece of cheese and some rice crackers, vegetarian chili from Trader Joe's with a dollop of Veganaise and some tortilla chips, "gyro" with turkey meatballs, tahini and veggies, and tuna salad in a half avocado or with crackers. I also have been getting good at eating my leftover dinner from the night before. If you knew me, then you would know that this is a milestone. 

How I prepare my tuna salad:
One Can Albacore Tuna in Water
Salt  
Black Pepper
Cayenne Pepper
Onion Powder
Tons of Lemon Juice (Watch out for seeds)
Tons of Dill
Tablespoon of Veganaise

Yum! I dream of the day when I can make all my meals at home. I'm the only person at work who brings their lunch (and snacks) to work EVERYDAY. It's totally worth it, but I can't wait to have these kinds of creations on the regular!

I think a parade is in order for this milestone. There should be flags and noisemakers and confetti.
