Dinner

I wanted to share a dish that I made last week for dinner. The first time I had this simple pasta was when my Aunt Teri made it for dinner. She is an amazing cook and could probably go into your fridge and take whatever you had in there and make something amazing. 


Key Ingredients


Shrimp (peeled and deveined)
1 Fresh Lemon
Pasta of your choice (I prefer penne or fusilli)
Fresh spinach
Cherry tomatoes
Shredded Parmesan
Salt/pepper/garlic powder

Saute the shrimp in olive oil. Season the shrimp however you prefer. I usually use salt, pepper, fresh garlic or garlic power and fresh squeezed lemon. Cook the shrimp until it turns pink.


Toss the cooked shrimp with the cooked pasta and add some butter and/or olive oil, salt, pepper, garlic powder, Parmesan cheese. Fold in fresh spinach (you do not need to cook this, the heat from the noodles is enough to soften the spinach) and cherry tomatoes. 

As you can see this is the most pathetic attempt at a "real" recipe but there really isn't one. You do a million variations of this pasta but my favorite part is the spinach and fresh tomato. You can add as much or as little spinach, tomatoes, shrimp or even cheese as you want.  This is a great dinner if you only want to make 1 dish, you want pasta and veggies and you are really hungry.
